Delicious Pasta Bottarga Recipe!
(makes 1 serving)
1) Precook 2 Oz (2 oz when dry) Spaghetti al dente, rinse & set aside
2) Fry one or two cloves of minced garlic in 2 tbsp of hot olive oil, in
a medium sized frying pan on medium to high heat. Let fry for a
minute or so, or just before garlic starts to brown.
3) (Optional) Throw in a handful of raw arugula, and fry until the leaves have
fallen.
4) Add pre-cooked, strained al dente spaghetti to the hot pan
along with the frying garlic & cooked arugula.
5) Toss gently to get the spaghetti coated in the hot olive oil, garlic
& arugula. Add salt & fresh ground pepper to taste, then transfer to dish.
6) Top spaghetti with 1tbsp of Grated Bottarga & 1 tsp of lemon zest.
Toss everything together in plate, & Enjoy!
